Recipe: 2 med zucchini's 1/2 onion,1 bell pepper, 1 ancho pepper 1 jalepeno pepper,1C sliced mushrooms, 3 cloves garlic minced 1-10 oz can condensed cream of chicken soup,2C bread crumbs 1- 10 oz can of condensed cream of chicken soup 1 tbsp flour,2 eggs, 1/4C pinon nuts * enough shredded cheddar cheese to cover tops of zucchini halves Slice and scoop out two medium zucchini's and salt the insides. Chop & Mix 1/2 onion, 1 bell pepper, 1 ancho pepper, 1 jalepeno pepper, saute till soft. Add 1 cup sliced mushrooms, 3 cloves of garlic (minced). Saute until onions start to brown. Add 1- 10oz can of condensed cream of chicken soup, 2 cups bread crumbs, 1 tbsp flour and 2 eggs.Drain salted zucchini halves of moisture. Stuff & bake 350 degrees for 35 minutes Top with cheddar cheese and sprinkle with pinon nuts.
