Hamburger-Mexican Meatloaf

Recipe: Combine the following ingredients together in a large bowl. 2 lbs. of ground beef 2 eggs beaten (I use large size) 1/2 cup Mexican Salsa (I use the mild variety, but if you like it hotter you can use it) 2 slices of bread finely crumbled 1/2 cup of shredded cheddar cheese 1/4 cup thinly sliced black olives Mix all the ingredients together well, then In a shallow bake pan shape the mixture into a loaf. If you prefer to use a 9 x 5 loaf pan make sure it is the non-stick kind. Bake in a preheated 375 degree oven for 1 hour or until cooked through. Optional after it cools you can top it or individual slices of it with more Mexican Salsa, Sour Cream, or Avacado dip. Makes about 10 slices.
