Fruit Cake
1 C. Butter = 1/2 lb.
2 C. sugar
3 C. flour (plain)
4 eggs ( seperated)
1 C. sweet milk
1 tsp. Vanilla
3 tsp. Baking Powder
1/2 lb. ea. chopped < English Walnuts
< Pecans < Brazil Nuts
1 C. Raisins
1/2 tsp.Cinnamon
1/2 tsp. Cloves
Filling (Icing)
1 Coconut grated
1 Orange "
1 Lemon "
1 can crushed pineapple
2 C. sugar
3 tsp.. corn starch or plain flour
Mix and cook until thick. Let cool before spreading on cake.
Preheat oven to 350 degrees.
Cream butter & sugar together.
Add egg yolks 1 at a time and beat well.
Sift flour & Baking powder alternately 3 times ea. Add alternately with 1 cup milk. Stiffly beat egg whites. fold in egg whites & vanilla.
Roll chopped nuts, raisins and spices in flour then add to 1/2 the batter. 2 layers are w/out spices, nuts & raisins.
Bake 2 layers light and 2 layers dark. Let cool then layer w/ filling (Icing).
