Javanese Pork Satay
1 - 8oz. can of applesauce
3/4C. dry white wine (Chablis, Chardonnay- I use the cheap boxed wine)
1/2C. soy sauce (low sodium version preferred)
2 Tbsp. salad oil
1C. finely diced onion
1 tsp. finely diced ginger
2 cloves garlic, minced
2-3 lb. pork shoulder or tenderloin cut into 2"x2" cubes
Mix first 7 ingredients together. Add the cubed pork and marinate at least 24hours. Soak 10" bamboo skewers in water for at least 1 hour. Drain marinade from pork and skewer 4-5 cubes of pork on each skewer. Barbeque on low heat for 15 minutes or more, until pork is golden brown on the outside. Serve with rice and your choice of grilled vegetables. |
