Spinach & Strawberry Salad with Sesame Dressing

Name: Shonna Thibodeau
Base: Ft. Huachuca
Recipe: My husband doesn't care for poppy seeds, so I came up with the dressing as a change to that most commonly seen with spinach and strawberry salad. Ingredients: 1 bag (about 12 oz.) baby spinach leaves 1 pt. fresh strawberries, cleaned/hulled and sliced dressing: ˝ small sized red onion, minced (about 2 Tlb.) ˝ C. extra-virgin olive oil 1/4 C. red wine vinegar ˝ tsp. dry mustard (powder) 1 Tlb. honey 2 tsp. sesame seeds dash of fresh ground black pepper Instructions: Toss spinach and strawberries together in large bowl. Prepared salad dressing by mixing all dressing ingredients together. Chill until ready to use and refrigerate left over dressing for up to 1 week. When ready to serve salad, lightly drizzle dressing over salad to coat all but not drown; toss well and serve.
