Recipe: Ham Salad Sandwiches Ingredients: 1 C. ham, cooked and ground (or canned potted meat) 1 to 2 sweet pickles, chpd. 1 Tlb. onion , finely chpd. ½ to 1/3 C. mayonnaise ¼ C. celery, chpd. finely 2 to 3 hard boiled eggs, chpd finely (optional) Instructions: Use fork to shred ham. Add all ingredients and mix well. Cover and refrigerate for at least 1 hr or overnight. Using one slice whole wheat bread and one slice white bread stacked together, trim crusts from bread. Cut square diagonally from corner to corner, ending up with 4 sets of small triangles. Between one triangle white and one of wheat, spread approximately on teaspoonful of filling. Arrange on plate by alternating light and dark triangles facing up. Garnish with fresh parsley or dill sprigs.
