Recipe: Memphis Rub 2 tbls paprika (Spanish pimenton is excellent) 1½ tsp dark brown sugar 1½ tsp sugar 1 tsp salt 1 tsp cayenne pepper ½ tsp celery salt ½ tsp freshly ground pepper ½ tsp dry mustard ½ tsp garlic powder ½ tsp onion powder Combine all ingredients in a small jar; twist the lid on airtight and shake to mix. May be stored away from heat and light for up to 6 months. Makes about ¼ cup, enough for 2 racks of ribs or 2 chickens.
