This no-cook recipe is a refreshing chilled dish especially great for picnics. Make as Hot & Spicy as you like! Stands alone as a side or as a dip.
This recipe is so flexible, depending on what's in the pantry...vary at will.
I combine the following directly in the dish I'm going to use to serve it:
1 can white yellow hominy
1 can black eyed peas
1 can black beans
1 can yellow whole kernel corn
1 jar your favorite salsa
1/2-1 tsp cumin (add more according to taste)
1-2 tsp chile powder (add more for spicy)
for more spice add 1 tsp ceyenne pepper
Chill overnight or at least 4 hours.
