Recipe: |
6 med. potatoes, peeled and cut into 1/2 inch cubes
3/4 c. crushed potato chips, divided
1/2 c. chopped onion
2 T. butter
3/4 tsp. salt
1/4 tsp. pepper
In a bowl, combine potatoes, 1/2 c. of potato chips, onion, butter, and salt and pepper. Toss to combine.
Transfer to a greased 2 quart baking dish. Sprinkle with remaining potato chips. Bake, uncovered at 350 for 40-50 minutes or until potatoes are tender.
