2 cups floor; 1/2 cup non-fat dry milk powder; 1/2 cup granulated sugar replacement (such as Sugar Twin); 2 teaspoons baking soda; 1/2 teaspoon salt; 2 cups grated or shredded carrots; 3/4 cup Canola oil; 3 eggs - slightly beaten; 1/2 cup chopped nuts; 1 teaspoon vanilla; 1 teaspoon ground cinnamon. Preheat oven to 350 degrees. Spray one 9-inch loaf pan with Baker's Joy. In a large bowl, combine all dry ingredients throughly. Add all remaining ingredients and beat until well mixed. Mixture will be very thick. Pour into prepared pan and bake for one hour at 350 degrees.
