Mom's Simple Simon Chicken
Coating:
1-1/2 cups cracker meal or fine cracker crumbs
1/3 cup grated Parmesan cheese
1 teaspoon dry mustard
2 garlic cloves, very finely chopped
1/4 teaspoon salt
1/8 teaspoon paprika
1/8 teaspoon cayenne pepper

2 broiler-fryer chickens, cut into eighths
1/2 cup corn oil, approximately
Preheat the oven to 375°F. Combine the coating ingredients in a shallow
bowl. Brush the chicken pieces lightly with oil and then roll them in the
coating mixture. Arrange the chicken in a single layer on a foil-lined
baking sheet. Bake 1 hour, or until tender and well browned.
