Chicken Stew with Couscous
3 cups chicken broth
1 chicken boullion cube
2 cups cooked chicken, cut up
1 medium onion, chopped
2 carrots, sliced
2 cups green beans cut
1 tsp. cumin
1 tsp. basil
1/2 tsp. dried parsley
salt and pepper to taste
Put these ingredients in one pot. Bring to a boil. Boil for 8 minutes.
After 8 minutes add to the pot:
2 small tomatoes, chopped
1 large or 2 small zucchini, sliced (slice a little thick, so they don't get mushy)
Cook for a few minutes, until zucchini is tender
When zucchini is tender add:
1 16-oz can of chick peas
1/4 teaspoon of red pepper
Cover pan and heat through.
Serve stew over hot heaps of couscous
